NES 2.3.0 has been released for the iPod Touch. If you haven’t already done so, I would strongly recommend doing so for one main reason that I have stated below.
After you update to 2.3.0 just reboot and you will see a new setting ACCELEROMETER! When this setting is enabled you will be able to control NES games by moving the iPod Touch! Imagine playing Mario this way (I haven’t tried this yet, but I have heard it works well with Pacman).
Keep in mind that NES 2.3.0 works very well with the 2.0 firmware.
**ALERT** NES 2.3.0 is currently only available on Cydia, not Installer.

Wow. I nearly bought a PSP so I could do this but didn;t realise I could get old NES games working on the iPhone.
Now all I need is to wait for my iPhone to arrive. Did you know that people (and I’m one) have signed up for an iPhone in Australia and have been waiting for weeks for them to arrive – even though the release date was last month?!
